The Thai burger: when Asian fusion makes sense

"Fusion" can be an off-putting word. It suggests random mixes. Our Thai burger is the best answer we have found: an honest burger, with an Asian touch that adds something instead of muddying the picture.
The recipe
A 180 g beef patty, lettuce, tomato, caramelised onion, cheddar, and a soy sauce reduction instead of ketchup. The reduction brings salt, sweetness and depth, and pairs very well with the caramelised onion. The bun is lightly toasted to hold the sauce.
Sweet potato fries or rice
You choose the side. Sweet potato fries are softer and slightly sweet, in the same direction as the soy reduction. Rice, more neutral, suits those who want a lighter meal. You can also ask for your burger with or without chilli.
A vegan version
The vegan Thai burger takes the same idea with tofu, tomato, caramelised onion and the soy reduction. It is not a token option: people who order it come back for it.
Why a burger in an Asian restaurant?
Because Châteauneuf-Grasse is a village where people come as a family, and not everyone wants the same dish. The Thai burger lets those who hesitate over a bo bun come anyway, and often taste their neighbour's bo bun the next time.
