If you only tried one dish at La Marmite Enchantée, it would probably be the bo bun. It is the dish people ask for most, the one that brings regulars back from Châteauneuf-Grasse and the neighbouring villages.
Where does bo bun come from?
Bò bún comes from Vietnam. The name combines "bò", beef, and "bún", rice vermicelli. Originally it is a bowl of cold vermicelli topped with lemongrass beef, raw vegetables, fresh herbs and peanuts, dressed with nuoc mam, the Vietnamese fish sauce. In France it gained chopped spring rolls, and that generous version is the one we love.
How we make it
Our bo bun is built in order: rice vermicelli at the bottom, then lettuce, carrot and cucumber in thin sticks, bean sprouts, the hot topping, herbs, crushed peanuts and spring rolls. The sauce ties everything together. Everything is prepared the same day, and the spring rolls are homemade.
Our versions
- Crispy chicken bo bun: breaded chicken fillets, for the contrast between crunch and fresh vegetables.
- Marinated chicken bo bun: the chicken is marinated then seared, tender and fragrant.
- Prawn bo bun: turmeric-marinated prawns and two vegan spring rolls.
- Vegan tofu bo bun: fried tofu in sweet and sour sauce, with vegan spring rolls.
- Classic bo bun: the simple version, for those who like the essentials.
A complete dish, hot and cold at once
Bo bun is a full meal: starch, raw vegetables, protein and herbs. It is warm on top and fresh underneath, which makes it as pleasant in summer as in winter. It also travels well: ordered online and collected on route de Gourdon, it arrives intact at home or at the office.
